Hi darlings, so you’ve probably noticed that lately I’ve been in the mood for chocolate, and a lot of it! Last week it was my super easy, gluten free,ย double chocolate chip cookies, that tasted too good to be true! And this week it’s 9 heavenly slices, of my just as good, not too sweet, Chocolate Cherry Fudge.
With hints of cherry in every bite, this vegan chocolate fudge has it all! It’s also gluten free, refined sugar free, completely vegan, and super easy to make!ย I added pure maple syrup, as a natural sweetener, and a splash of vanilla, for extra flavor! It’s perfectly infused with cocoa powder, tastes exceptionally pleasing, and I can’t wait to hear what you all think! So, let’s brighten up with a rich, chocolate cherry fudge! ๐
What You’ll Need
For The Base
- 5 Medjool Dates, pits removed
- 1/3 cup of Almond Meal
- 1/3 cup of Coconut Flakes
- 1/8 cup Pecans
For The Chocolate Cherry Fudgeย
- 3 Tablespoons of Coconut Oil
- 1/3 cup of 100% Almond Butter
- 3 Teaspoons of Vanilla Essence
- 2.5 Tablespoons of Maple Syrup
- 1.5 Tablespoons of Cocoa Powder
- 6 Tablespoons of Coconut Cream
- 1/3 cup of Dried Cherries
Instructions
1. Place the medjool dates, pits removed, into a food processor, and blend until it breaks down into a paste mixture. Next, add the almond meal, coconut flakes, and pecans, and blend, until combined.
2. Transfer your mixture to an 8 x 4 x 1/2-inch loaf pan (20 x 10 x 6 cm), lined with baking paper, then firmly press the mixture, into an evenly formed base.
For The Rich Chocolate Cherry Fudge
1. Add about an inch of water (2.5 cm) to a small pot, and heat, until the water almost comes to a boil.
2. Switch off the heat, then place a heat proof, glass bowl, on top of the pot. Make sure that the bowl isn’t touching the water, as the steam is just enough to gently melt, and combine our ingredients.
3. Next, place the coconut oil in the bowl. When it melts, add the rest of the ingredients, except for the dried cherries, and mix well, until your fudge mixture is nice and smooth, then take it off the pot, and set aside.
4. Roughly chop the dried cherries, and evenly place them on top of your base.
5. Next, pour the vegan chocolate fudge on top of it all, and with a spatula, smooth it out.
6. Finally, pop your vegan chocolate fudge into the freezer for an hour, to set.
7. Take the pan out of the freezer, slice into 9 even squares, and your choc cherry slices are ready to devour!
