I’m loving these scrumptious soda scones! They’re a quick, delicious fix, when I’m out of bread, or just want to spice things up a bit! They’re super easy to make, and packed with fresh oregano, and olives!
But wait, it gets better! These scrumptious savory soda scones, don’t need to rest, and rise, because there’s no yeast in them. They’re made using regular soda water, and taste exceptional. Plus, the aroma that fills the kitchen while these scones are baking, is out of this world!
I remember, as a child, my Mum used to make these with lemonade soda. And while I do adore her baking, I knew I had to replace it, with something a tad healthier! So, I thought, why not replace it with regular soda water?
As Spelt flour is a staple in my kitchen, I mixed it together with some sea salt, baking powder, coconut cream, soda water, and olive oil. They tasted all right, but not WOW!
So, back in my kitchen, I added some kalamata olives I had lying in my fridge, from my healthy vegan mini pizzas, that I recently made, and some fresh oregano, from my garden. I added more sea salt, and black pepper, along with some other flavor enhancers, then popped them back into the oven, and well, WOW! They tasted incredible, and were perfectly infused with oregano!
So, enough talk from me, and let’s bake ourselves a batch of these healthier soda scones.

What You’ll Need
Makes 9 easy soda scones
- 1 Cup of Whole Spelt Flour
- 1 and a 1/2 Teaspoons of Baking Powder
- 1/2 Teaspoon of Sea Salt
- 1/4 Teaspoon of Ground Black Pepper
- 1/4 Cup of Coconut Cream
- Large Sprig of Fresh Oregano
- 1/3 Cup of Soda Water
- 1/8 Cup of Chopped Walnuts
- 3 Kalamata Olives, pits removed
- 1 Tablespoon of Olive Oil
1. Preheat the oven to 356 degrees F (180 C)
2. Sift the spelt flour, and place it into a medium sized bowl, then add the baking powder, sea salt, and black pepper, and give it a quick mix.
3. Next, chop the kalamata olives, pits removed, finely chop the fresh oregano leaves, and add it to the bowl.
4. Mix together the coconut cream, and olive oil. Add it to the bowl, along with the soda water, and mix with a spoon, until you have a sticky dough.
5. Flour your hands, then place your dough onto a floured surface, and shape into a ball. Roll the dough, until about 0.5 an inch (just over 1 cm) in height. Don’t forget to occasionally lift the dough, and lightly flour your surface, or your dough will stick to your counter top, by the time you’re done!
6. Take a round cookie cutter, cut out your soda scones, and place them onto a baking tray, lined with baking paper.
7. Repeat with the leftover dough, trying not to play around with it too much, or they’ll taste tough, after they’re baked.
8. Pop your tray into the oven, until they’re lightly golden brown, around 10 – 15 minutes, then take them out to cool down.
9. Slice your vegan soda scones in half, then smear it with some almond butter, tahini, or any other spread of your choice, and dig in! 🙂
