Cold Cauliflower Salad With Toasted Sesame Seeds And More!

The other week, while my sister in-law and I were in the kitchen, preparing for a family get together in our backyard, she made a crunchy, refreshing, minty, cold cauliflower salad. As soon as we took a bite, we both said it deserves a spot on my blog! So, that’s exactly what I did.

I cooked the cauliflower florets, until they were al dente, finely chopped a generous handful of fresh mint leaves, then started adding a few personal touches like crushed garlic, finely sliced red onion, lemon zest, and lots of lemon juice. I also amped up the heat, by adding some red chili, and toasted whole sesame seeds.

The great thing about this salad, is you can easily prepare almost everything ahead of time. And when you want to serve it, just add the toasted sesame seeds, chop the mint leaves, and dig in!

You may think this is just another salad, but trust me, your taste buds are in for a refreshing treat.

What You’ll Need

Makes 1 cold cauliflower salad

  • 1 small Cauliflower Head, or 3 Cups of florets
  • 1 Tablespoon of Olive Oil
  • Handful of Fresh Mint Leaves
  • Sea Salt to taste
  • 1 Large Lemon
  • 1 Teaspoon of Lemon Zest
  • 2 – 3 Garlic Cloves
  • 2 Tablespoons of Whole Sesame Seeds
  • 1 Medium Red Chili
  • 1/2 Cup of Finely Sliced Red Onion

Instructions

1. Wash, and break the cauliflower head into small bite sized florets, then place them into a pot, with water, and bring to a boil. Take it off the heat, strain, and wash with cold water, to cool them down.

2. Heat a non-stick sauce pan, then add the sesame seeds in a thin layer, and toss until they start to slightly color. Next, crush the garlic cloves, finely chop a handful of fresh mint leaves, and set aside.

3. Finely dice the red chili, and finely slice the red onion, as thin as possible, then place them into a serving bowl.

4. Add the crushed garlic, olive oil, lemon zest, grind, lemon juice, sea salt to taste, along with the cauliflower florets, and give it a good mix.

5. If you want to serve it right away, then add the toasted sesame seeds, and chopped mint leaves, and your cauliflower salad is ready to serve!

6. If you want to make it ahead of time, add everything except the mint leaves, and sesame seeds. Then, when you want to eat the salad, add them, and serve.
