Healthy Vegan No Bake Energy Balls!

Ingredients

  • 2/3 Cup Oatmeal 50 gr
  • 1/4 Cup Pumpkin Seeds 35 gr
  • 1/4 Cup Sunflower Seeds 30 gr
  • 2 Tablespoons Chia Seeds 17 gr
  • 2 Tablespoons Ground Flax Seed 10 gr
  • 1/4 Cup Almonds 35 gr
  • 10 Medjool Dates 240 gr, pits removed
  • 1/3 Cup Peanut Butter 90 gr
  • 2 Tablespoons Blackstrap Molasses 30 gr

Instructions

  1. Place the oatmeal, pumpkin seeds, sunflower seeds, chia seeds, ground flaxseed and almonds into a food processor and blend until coarse. 

  2. Add the medjool dates, pits removed, and blend until well combined.

  3. Add the peanut butter, along with the blackstrap molasses and blend until mixture forms.

  4. Check if the mixture sticks between two fingers, if not, pulse a few more times until well combined.
  5. Evenly divide your energy ball mixture into 10 balls and roll.
  6. You can roll half in shredded coconut, like I did, or leave them as is.
