Hi darlings! Hope your week has gone by great, and you’re starting to prep for the weekend. Today I want to share with you a mouth-watering raw vegan blueberry tart that’s super quick and easy to make, and tastes divine. Plus, not only is this delicious, luxurious tart raw, which I love! It’s VEGAN too!
This raw blueberry tart is great for people who are looking for a dairy free and gluten free sweet treat 🙂
The raw berry tart filling is VERY satisfying, refreshing and fruity, with a slight tangy taste, and is perfectly infused with blueberries. Remember when I say, you’re going to fall in love with this blueberry tart.
So enough talk, and let’s make ourselves a raw berry tart that’s ready in a jiffy 🙂
What you’ll need
Makes 1 -20 cm tart or 2 -12 cm tarts
180 gr of blueberries
40 gr of coconut oil
30 gr of shredded coconut
60 gr of cashews, soaked for a few hours or best overnight
Big splash of vanilla
2 teaspoons of pure almond paste
1 teaspoon of pure date syrup
Let’s make us a Raw Vegan Blueberry Tart
First begin by making the tart base, and letting it cool in the fridge while we make our filling.
While our tart base is chilling, drain the soaked cashews, I always like to keep some soaked cashews in the fridge, and blend, along with the coconut oil and shredded coconut, in a food processor.
Stop occasionally to scrape down the sides. You’re looking for a smooth consistency, so be patient, because this step is what will determine the smoothness of your vegan blueberry tart filling.
Next, add the blueberries, the pure almond paste and date syrup along with a good splash of vanilla, and blend until smooth. Almost finished.
Now, transfer all that goodness into your prepared tart base and chill for a few hours. Serve with a few fresh blueberries and DIG IN!
